Air fryer apple turnovers
A classic handheld pastry filled with cooked apple – but air-fried! These turnovers are incredibly crisp, super tasty and a doddle to make: a triple threat of easy baking. Discover all of our air fryer recipes here, or find more puff pastry recipes.
Method
Core and chop 2 of the apples into 1cm chunks and put in a saucepan with the sugar, cinnamon and a splash of water. Cover and cook over a medium heat for about 15 minutes, then crush lightly with a wooden spoon.
Core and chop the remaining apple into small cubes (around 5mm) and stir them into the cooked apple mixture along with the butter. Cook for 5 minutes, uncovered and stirring regularly. Leave to cool.
Unroll the pastry, cut it in half lengthways and then widthways to create 4 rectangles. Spoon a quarter of the apple mixture onto the bottom half of each rectangle, leaving a 1cm border.
Brush the exposed pastry edges with the beaten egg, then fold over the pastry to encase the filling. Use a fork to crimp the edges and seal together, brush the tops with more egg and sprinkle with more sugar.
Turn the air fryer to 200°C. Cook the turnovers directly in the basket for 10 minutes (work in batches if all 4 don’t fit in a single layer). Once the top is golden, flip them over and cook for another 5 minutes. Serve with caramel sauce (if you like).
