Our easy cantaloupe melon and mint granita is the perfect dessert for sultry summer days. Learn how to make this refreshing, four-ingredient granita with our simple recipe. Sunny summer flavours: “A ripe melon is an incredible thing, full of sweet honeyed flavours that are perfect captured in a granita,” says head of food Tom Shingler. “A little lemon lifts everything, while the mint adds to the refreshment without veering into toothpaste territory.” Quick and easy: all you need is four ingredients and five minutes prep time to make this no-churn iced dessert. You can even use a blender to whizz the finished frozen result into melt-in-the-mouth shards, rather than using a fork. Scale it up: this simple recipe is easily scaled up to feed a crowd. Method
Put the melon, sugar, lemon juice and around 5 mint leaves in a blender. Whizz until smooth. Give it a taste; how minty you like it will be down to personal preference, but you still want the flavour of the melon to lead things. Add a few more mint leaves if you like.
Transfer the mixture to a shallow freezer-proof container, then freeze until solid. Once solid, scrape the mixture with a fork to create the granita (or break up the block and pulse a few times in a blender). Serve garnished with a mint leaf.
