Slicing kernels from a fresh cob sends sweet, milky juice across the board, and none of it goes to waste here. The bare cobs simmer in the broth to draw out their flavour, while smoky lardons and softened vegetables build the base, and dark grains of wild rice cook alongside.

Why it’s so good: Blending part of the pot gives a silky body without much cream, and the wild rice keeps its chew against the soft kernels and potato.

Make it easy: Cook the wild rice a day ahead, or use 400g frozen sweetcorn and skip the cobs when fresh ones are over.
