The chef behind Alex Dilling at Hotel Café Royal will cook at Round Hill Hotel and Villas, near Montego Bay, from 26 to 28 November.
Chef Alex Dilling is leaving Regent Street for the Caribbean this November. From 26 to 28 November he will hold a short residency at Round Hill Hotel and Villas on the coast near Montego Bay, bringing the modern French cooking of his London restaurant to Jamaica.
The residency brings together two members of The Set, the independent luxury hotel collection that includes both Hotel Café Royal in London and Round Hill.
Dilling’s restaurant at Hotel Café Royal earned two Michelin stars in 2023, within six months of opening. His cooking draws on classical French technique to create distinctly modern dishes, with a strong focus on seasonal ingredients, and in 2024 he was named on the 50 Best Discovery list.
The residency
Thursday 26 November: The Art of the Craft. A live cooking demonstration in which Dilling shows the techniques behind his cooking. It is free for all hotel guests.
Saturday 28 November: The Grand Finale Dinner. A five-course tasting menu in Dilling’s signature style, which blends classical French influence with modern technique.
